Swissmar's Lausanne 3-in-1 copper fondue set, with its warm, inviting glow, makes it oh-so-tempting to explore the mouthwatering possibilities available with oil, cheese, and chocolate. Traditionally shaped with sturdy proportions and large handles, this modern version of the earthenware original combines communal tradition with lighter, more efficient construction and versatile design.

The 11-piece set starts with a handsome and efficient 18/8 copper-plated stainless-steel pot sitting in a sturdy rechaud stand. The two metals work together to offer an ideal combination of rapid heating and even, long-lasting heat distribution with no metallic taste. A removable splatter ring on top is notched with nooks for six numbered stainless-steel forks to keep hands safe, cool, and confident while dining. Underneath, an easily accessible paste/gel fuel burner allows chefs to control the temperature for best cooking results. To melt cheese or chocolate, add the high-sided, 1.3-quart ceramic bowl insert and use water in the pot to create a double boiler that won't burn the delicate ingredients within but will keep them wonderfully smooth and bubbly. For meat, remove the insert and pour oil or another fondue broth right into the 1.9-quart pot itself--the liquid will remain at a consistent 350 degrees F.     This is a very functional fondue set (3 in 1, as advertised) – it is hard to find alternatives, even in a large price range. If you don’t care about looks, but need functional, this is it, if you can swallow the price.

    The bad news:

    The quality of this set if sub-par.

    The copper plating is cheap – very cheap. In fact, 3 replacements later, I gave up (the thin copper plating was marred, burned, or completely scratched off out of the box)

    The steel is also thin – not necessarily a problem, but the unit could easily warp, and doesn’t hold as much heat for as long as ceramic/iron sets.

    2 stars, given the price (thin steel sets can be found for far less, this copper plating – and even the simple ceramic insert – doesn’t justify the price)

    This Swissmar fondue set is excellent. I love how stylish it is. I looked on Amazon and other sites looking for a flexible fondue set that could do:

    - cheeses

    - broths for meat

    - chocolate

    Flexibility is what I was looking for. The 3 in 1 is perfect for doing cheese to start with, when done with that course, remove the ceramic bowl, pour the water out of the copper pot, and put in your broth. Although I haven’t used it for chocolate yet, I’m sure it will work well for that. Using this setup for cheese is better than ones that have the burner directly heating the bottom of the bowl instead of water between the pot and bowl which more evenly distributes the heat. Others tend to burn on the bottom unless you constantly stir. Of course if you’re into the tradition of Swiss fondue cooking, the “thick” part in the bottom is the tasty part for your special guest!

    The burner is hot enough to keep your broth simmering unlike another I have used. Also it holds enough fuel to keep things going throughout that course. You will need to refill it between cheese and broth – of course make sure it’s extinguished and cool before doing so. I used bottled gel purchased from a local cooking store.

    An excellent purchase – I am very happy with it.
